Judy Scruggs shared this recipe when I met her in the checkout line at the grocery store. They are my favorite cookies. Oh my goodness...... I can't stop!!!
Ingredients:
1 cup sugar
1 cup powdered sugar
1 cup butter, unsalted
1 cup cooking oil
2 eggs
4 1/2 cups flour
1 teaspoon cream of tartar
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
Directions:
1. Preheat oven to 375 degrees.
2. Combine first 4 ingredients. Beat well.
3. Add remaining ingredients and mix well.
4. Drop small balls of dough on ungreased cookie sheet.
5. Flatten slightly at edges.
6. Dough can be chilled before baking.
7. Also can be stored in tightly sealed bowl for several days. It can also be frozen. Just make what you need and save the rest for later. I save it for quite a while sometimes and you just can't tell. I don't have the time for the cookies to bake, but it doesn't take long and when they start to turn golden around the edges they are ready.
