Ingredients:
1 cup all purpose flour
pinch of baking soda
2 tablespoons of granulated sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 egg well beaten
1 1/4 cup milk
1/2 cup canned pumpkin
2 tablespoon melted shortening
Directions:
1. COMBINE EGG, SHORTENING, PUMPKIN AND MILK; ADD TO FLOUR MIXTURE WITH OTHER DRY INGR., BEATING UNTIL SMOOTH, SPOON OUT DESIRED AMT AND SIZE OF PANCAKE, BAKE ON HOT LIGHTLY GREASED GRIDDLE, TURNING ONLY ONCE.
2. SERVE HOT WITH BUTTER OR FAVORITE SYRUP OR FRUIT, AND WHIPPED CREAM
