I found this recipe on The Daily Recipe. I have not tried this recipe, but I'm posting it for safe keeping. I plan to use sugar free Cool Whip, pudding and unsweetened coconut.
Ingredients:
16 ounces small curd cottage cheese
16 ounces sour cream
16 ounces cool whip (large container)
8 ounces jell-o instant pistachio pudding mix (2 small packages)
16 ounces crushed pineapple (juice drained)
8 ounces shredded coconut (1 small package)
Directions:
1. Combine all of the ingredients in a large bowl in the order given and refrigerate for at last 3 hours before serving.
2. Enjoy!
