This cake is a quick easy way to use up those bananas that are about to turn!
Ingredients:
1 1/2 cup sugar (i used dark brown)
3-4 mashed bananas
1/2 cup oil (i used peanut)
2 eggs
1/4 cup buttermilk (i used 2%, but you could use soy)
1 tsp vanilla
2 cups flour (i used 1 cup white & 1 cup wheat)
1 tsp baking soda
1/2 tsp salt
cream cheese frosting
optional: toasted coconut, sliced bananas, chopped walnuts
Directions:
1. Cobine first 6 wet ingredients.
2. Sift together the dry ingredients.
3. Slowly add the dry ingredientd to the wet. Be sure not to overmix,
4. Bake until a toothpick comes out clean.
5. 25 minutes for 2 round
6. 35 minutes for a bundt pan
7. 40-45 minutes for a 9 X 13 pan
8. Top with Cream Cheese frosting & toasted coconut or sliced bananas or your favorite chopped nuts.
