Amazing Peppermint Chocolate Chocolate Chip Cookies!

These cookies are great for around the holidays (or any time you have a chocolate/peppermint craving!), and they are sure to put a smile on your face! My sister, who is a wonderful baker, came up with this recipe and gave these treats away as a gift! I doctored them up a little, to decorate them on the outside! Have fun and make them your own!
Ingredients:
1/2 cup butter (one stick)
1 cup brown sugar
1 cup sugar (we use organic sugar from trader joe's)
2 eggs
1/2 tablespoon vanilla
3/4 tablespoon peppermint extract (or more, if you like more peppermint flavor in your cookie)
1 teaspoon baking soda
1/2-1 teaspoon salt
2 1/4 cups whole wheat flour
1 cup chocolate chips, melted
1 1/2 cups chocolate chips
1 cup white chocolate chips, melted (or your preference of chocolate)
festive colored sprinkles
Directions:
1. Preheat oven to 350 degrees.
2. Melted Chocolate: Place a glass bowl over a pot of simmering water on the stove.
3. Add 1 cup chocolate chips to the bowl, and stir occasionally, until melted, then remove from heat.
4. Cookie: Combine butter and sugar until well blended.
5. Add eggs (one at a time).
6. Add vanilla, peppermint extract, and melted chocolate - mix until fully incorporated.
7. Add baking soda and salt, mix.
8. Add whole wheat flour, mixing slowly. Scrape the sides of the bowl to make sure everything is fully combined.
9. Add in Chocolate chips, mix in slowly, or by hand.
10. Drop spoon-fulls of cookie dough onto a prepared cookie sheet, and bake for 10-12 minutes (depending on your ovens temperature).
11. Remove from oven, and let cool.
12. Options for decoration:.
13. Melt 1 cup of white chocolate chips, or your choice of chocolate chips.
14. Dip 1/2 of a cooled cookie into the melted chocolate, and place on a cookie sheet lined with wax paper.
15. Immediately sprinkle with festive colored sprinkles to decorate.
16. Let the chocolate fully cool (you can place it in the fridge to speed up the process).
17. Remove from wax paper, and ENJOY - or share!
