MmmmMmmm Damn! That's what went around the table when this was served. I used my Nothing To It No Bake Chocolate Cheesecake as a base idea, but wanted to amp it up a little. Read more . The looks on their faces indicate I succeeded. :)
Ingredients:
1 8 or 9 inch chocolate cookie crust(homemade or purchased)
12oz quality milk or dark chocolate(chips are okay, as long as you use a good brand)
1/4-1/2 cup bailey's original irish cream(the full 1/2 cup is what i used and was a fairly intense flavor and less chocolaty...perfect for us!)
8oz cream cheese, softened
3t butter, softened
1/2 cup powdered sugar
1t vanilla
2 cup heavy whipping cream, whipped to stiff peaks(or can probably sub 1 regular sized cool whip, just thawed)
Directions:
1. In medium glass bowl melt chocolate, with Irish Cream, slowly(20 seconds at a time) in microwave or over double broiler. If the chocolate gets kind of thick and seizing, like, try not to panic, just make sure to stir in the cream well. As long as it's not grainy, and it's fully incorporated, it will mix in fine with the rest of the ingredients.
2. In mixing bowl, beat cream cheese, butter, powdered sugar and vanilla.
3. Add melted chocolate and mix well until uniform color.
4. Carefully fold in whipped cream until all incorporated and uniform color.
5. Spoon into crust and chill at least 4 hours.
6. (top with chocolate curls or shaved chocolate and a dab more whipped cream, if desired)
