This cake was in all the ladies cooking magazine about 12 years ago... We made this several times at the office...Its a good cake for the fall... Ingredients:
3 cups unsifted flour |
2 cups sugar |
1 cup mayonnaise |
1/3 cup milk |
2 eggs |
2 teaspoons baking powder |
1 1/2 teaspoons ground cinnamon |
1/2 teaspoon ground nutmeg |
1/2 teaspoon salt |
1/4 teaspoon ground cloves |
3 cups chopped peeled apples |
1 cup seedless raisins |
1/2 cup coarsely chopped walnuts |
Directions:
1. Grease and flour 2 9 inch round baking pans.
2. In a large bowl with mixer at low speed beat first 10 ingredients for
3. 2 minutes, scraping bowl frequently.
4. Batter will be very thick.
5. With spoon stir in apples, raisins and nuts.
6. Spoon batter into pans.
7. Bake at 350 degrees for 45 minutes.
8. Cool in pans for 10 minutes.
9. You can frost this cake with 2 cups of whipped cream..... or you can frost it with sour cream frosting.... either one is great on the cake...
10. Sprinkle with extra nuts for garnish...
