Amaranth Flour - Pancakes

Ingredients:
2 eggs
1/2 cup milk or apple juice
2 tsp coconut oil (or regular oil)
1/2 cup fields of grain organic amaranth flour
1/2 cup tapioca flour (or cornstarch, potato & rice starch)
6 t arrowroot (or cornstarch, potato & rice starch)
1/2 tsp cinnamon
1/2 tsp fields of grain non-aluminum baking powder
1/4 tsp fields of grain natural redmond salt
Directions:
1. Combine eggs, milk, oil in a bowl.
2. In separate bowl, mix dry ingredients.
3. Add dry ingredients to egg mixture a little at a time, mixing well after each addition.
4. Heat griddle or shallow pan to medium heat and cook until golden brown on both sides.
5. Serves 10
