Ingredients:
1/3 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon curry powder
1/4 teaspoon pepper
2 cups minced cooked chicken
1/2 cup blanched almonds, chopped
2 (16-ounce) loaves white bread
pimiento strips (optional)
Directions:
1. Combine first 4 ingredients, mixing well. Add chicken and almonds; mix well.
2. Remove crust from bread, and cut into rounds with a 2 1/2-inch cookie cutter; slice each round in half, and spread with chicken mixture. Garnish with pimiento strips, if desired.
