Alton Brown's Glazed Carrots |

Sounds terrific - will be making this soon! Ingredients:
1 lb carrot |
1 ounce butter |
1 pinch salt |
1 cup ginger ale |
1/2 teaspoon chili powder |
1 tablespoon fresh parsley, chopped |
Directions:
1. Wash & peel carrots, if necessary. 2. Cut 1/4 inch slices on the bias (consistency important). 3. In a 12-inch saute pan over medium heat, combine the carrots, butter, salt and ginger ale. 4. Cover and bring to a simmer. 5. Once simmering, remove the lid, stir, and reduce the heat to low. 6. Cover again and cook for 5 minutes. 7. Remove the lid, add the chili powder and increase the heat to high. Cook, tossing occasionally, until the ginger ale is reduced to a glaze, approximately 4 to 5 minutes. 8. Pour into a serving dish and sprinkle with the parsley. 9. Serve immediately. |
