Our oldest son helped plan a dinner at the restaurant he manages for our 30th anniversary and one of the things that we had was glazed carrots. This is the recipe that he used and it was excellent!
Ingredients:
1 lb carrot, approximately 7 medium, peeled and cut on the bias 1/4-inch thick
2 tablespoons unsalted butter
1 pinch kosher salt
1 cup ginger ale (good quality)
1/2 teaspoon chili powder
1 tablespoon fresh parsley, chopped
Directions:
1. In a 12-inch saute pan over medium heat, combine the carrots, butter, salt and ginger ale.
2. Cover and bring to a simmer.
3. Once simmering, remove the lid, stir, and reduce the heat to low.
4. Cover again and cook for 5 minutes.
5. Remove the lid, add the chili powder and increase the heat to high.
6. Cook, tossing occasionally, until the ginger ale is reduced to a glaze, approximately 4 to 5 minutes.
7. Pour into a serving dish and sprinkle with the parsley.
8. Serve immediately.
