Alpine Potato Bake

Very inexpensive side dish with abundant flavor and easy to fix.
Ingredients:
2 lbs. potatoes
1 cup chopped onion
1/4 cup butter or margarine
2 t. all purpose flour
1/4 tsp. pepper
2 t. spicy brown mustard
2 cups chicken broth or bouillion
1 tsp. horseradish
1/4 cup dried bread crumbs
Directions:
1. Butter a 2 qt. rectangular baking dish.
2. In a 3 qt. saucepan, cook potatoes in boiling salted water until tender.
3. Drain and let cool.
4. Preheat oven to 375
5. In the same saucepan over med. heat, saute onion in butter for 10 min. or until tender and golden.
6. Stir in flour and pepper, then broth.
7. Stirring, bring to a boil and boil for 1 min. Remove from heat.
8. Whisk in spicy brown mustard and horseradish.
9. Slice potatoes 1/2 thick.
10. Layer in baking dish.
11. Cover potatoes with sauce and sprinkle with bread crumbs.
12. Bake for 15-20 minutes or until hot and bubbly.
