Spicy potatoes, tomatoes and onions with an Indian kick.
Ingredients:
1 onion, chopped
1/4 cup vegetable oil
1 lb potato, peeled and cubed
1 teaspoon salt
1/2 teaspoon cayenne
1/2 teaspoon ground turmeric
1/4 teaspoon cumin
2 tomatoes, chopped
Directions:
1. Lightly brown onion in oil in medium skillet.
2. Stir in salt cayenne turmeric and cumin.
3. Add potatoes and cook 20 minutes stirring occasionally.
4. Add tomatoes; cover and cook until potatoes are soft, about 20 minutes.
