I was looking for a good chili recipe and this works. I made a couple of adjustments and it is the one I will make when I need chili. I made enough to freeze some. It makes a lot and it should be easy to cut in half.
Ingredients:
• 2 pounds ground beef
• 1 can (29 ounce size) tomato sauce
• 5 cans (15 ounce size) kidney beans w/liquid
• 1 can (29 ounce size) pinto beans w/liquid
• 1 medium onion, diced
• 2 green chili, diced ( i used i can of diced chiles)
• 1 rib celery, diced
• 3 medium tomatoes, chopped (no salt tomatoes in the can work well if totally ripe tomatoes are not in season.)
• i added 1 can and the 3 tomatoes
• 2 teaspoons cumin powder
• 3 tablespoons chili powder
• 1 tablespoon granulated garlic
• 1 1/2 teaspoon black pepper
• 2 teaspoons salt (i did not add salt. these is so much in the beans, add some to the bowl if you need it.)
• 2 cups water (i did not add any water, the liquid from the cans was sufficient and took a while to boil down.)
Directions:
1. 1. Brown the beef and drain the fat off.
2. 2. Crumble the cooked beef into pea size pieces.
3. 3. In a large pot, combine the beef plus the remaining ingredients and bring to a simmer over low heat.
4. 4. Cook stirring every 15 minutes for 5 hours. The recipe called for 2-3 but going 5 hours reduces the liquid and it thickened just right.
5. 5. I like kidney beans in my chili so I added 3 cans to the one large can called for in the recipe.
6. 6. The heat level is individual and some may want more heat, add to the bowl.
7. 7. This was just good stuff, looked and tasted like what I thought chili should be. Enjoy, JJ.
