Almost My Grandmas Date Squares

Both my Grandma and my Mom would make these delicious squares when I was little. So many years have passed since then, but I intend to revive the tradition. HISTORY: Old cookbooks also called this Matrimonial Cake, Date Sandwich Cake, and Fig Squares. Read more . The old recipes would add a lot of sugar to the filling, but the more modern version, like this one, reduces the amount of sugar. You can even reduce it further, according to your family's taste.
Ingredients:
date filling
3/4 lb pitted dates, chopped
1 cup water
1/3 cup brown sugar, packed
1 tsp lemon juice
crumb mixture
1-1/2 cups rolled oats
1-1/2 cups flour
1/4 tsp salt
3/4 tsp baking soda
1 cup brown sugar, packed
3/4 cup butter, softened
Directions:
1. DATE FILLING:
2. Add dates, water, brown sugar, and cook in pot over medium heat, stirring often, until dates are soft and mixture is thickened (about 15 minutes) YMMV - your mileage may vary
3. Stir in lemon juice and remove from heat
4. Let cool
5. Optional: You can microwave date mixture, but you will be on your own for settings and how long.
6. CRUMB MIXTURE:
7. Combine oats, flour, salt, soda, sugar in bowl
8. Add butter, cutting into mixture until crumbly
9. Press 1/2 crumb mixture into bottom of 9 inch square pan
10. Spread cooled filling evenly over the top of bottom layer
11. Spread remaining crumble mixture over date mixture
12. Bake in a 350F oven for 20-25 minutes or until top is nicely toasted.
13. Let cool before cutting into squares
