Almost Fat-free Colorful Chicken Stew |

This is almost fat-free comfort food. Made in a slow-cooker it's a set-it-and-forget-it meal for days when you're too busy to cook. Use the veggies right from the garden!!! Ingredients:
1 pound boneless, skinless chicken breasts, cubed |
1 can italian diced tomatoes, undrained |
2 medium potatoes, peeled and cut into about 1/2-inch cubes |
5 medium carrots, chopped |
3 celery ribs, chopped |
1 large onion, peeled and chopped |
1 medium green pepper or sweet red pepper, chopped |
2 cans (4 ounces each) mushroom stems and pieces, drained (i don't grow my own so i just use the canned.) |
2 chicken bouillon cubes, can use low-sodium bouillon |
2 teaspoons sugar |
1 teaspoon chili powder |
1/4 teaspoon pepper |
1 tablespoon cornstarch |
2 cups cold water |
Directions:
1. In a 5-quart slow cooker, combine all the ingredients EXCEPT cornstarch and water. 2. In a small bowl, combine cornstarch and water. 3. Stir cornstarch and water mixture into chicken mixture. 4. Cover and cook on low for 8-10 hours or until vegetables are tender. 5. If your slow cooker is like mine, check that the potatoes are soft! |
