This is a Copy Cat Olive Garden Pasta e Fagioli recipe I found online with a few adjustments to suit our tastes.
Ingredients:
1/2 lb. ground beef
1/2 lb. italian sausage, bulk
1 small onion, diced
1 large carrot, finely diced
3 stalks celery, diced
2 cloves garlic, minced
2 14.5-oz. cans diced tomatoes
1 15-oz. can cannelloni beans, with liquid
1 15-oz. can great northern beans, with liquid
1 15-oz. can tomato sauce
1 12-oz. can v-8 juice
1 tbls. white vinegar
1 tsp. salt
1 tsp. oregano
1 tsp. basil
1/2 tsp. pepper
1/2 tsp. thyme
1/2 lb. elbow pasta
handful of spinach
grated parmesan to garnish
Directions:
1. Brown ground beef and sausage in large saucepan over medium heat Drain fat
2. Add onion, carrot, celery and garlic; cook for 10 minutes or until veggies are crisp tender.
3. Add remaining ingredients, except pasta and spinach; simmer for 1 hour
4. In another saucepan, cook pasta according to package directions until al dente
5. Drain pasta
6. After soup has simmered an hour, add cooked pasta and spinach then simmer 5-10 minutes
7. After placing in bowls, sprinkle with Parmesan cheese
