Almond Rice Salad

Nice change of pace salad. Fresh tasting with a lot of crunch. Quick prep especially if using leftover rice.
Ingredients:
1 cup raw spinach
2 stalks celery
1 medium tomato
1 medium cucumber
1/4 cup green onion
2/3 cup slivered almonds
2 tbsp italian dressing
2 tbsp distilled vinegar
2 tbsp lemon juice
1 cup cooked long grain brown rice
1 black pepper to taste
Directions:
1. Wash and chop all vegetables. It's best to let the vegetables dry before preparing so the dressing doesn't get too watered down.
2. Add vegetables to large bowl and toss.
3. Add liquid ingredients to vegetables and toss.
4. Add rice to vegetables and toss. If serving immediately leaving the rice warm makes for a nice contrast with the vegetables; but if preparing ahead it's best to cool the rice before adding to the vegetables.
