Almond Rice Pilaf

Great side dish for company.
Ingredients:
2/3 cup blue diamond blanched slivered almond
3 tablespoons butter, divided
1 cup chopped onion
2 garlic cloves, minced
1 small green pepper, fine chopped
1 cup long grain rice
1/2 cup raisins
1 teaspoon cumin
1/2 teaspoon salt
1 3/4 cups chicken broth
Directions:
1. Saute the almonds in 1 Tbsp butter till golden;reserve.
2. Saute onions and garlic in remaining butter till translucent.
3. Add green pepper and salt, saute 2 minutes.
4. Add chicken broth.
5. Bring to boil. Reduce heat to low, cover and cook 20 minutes till liquid is absorbed.
6. Remove from heat and let stand covered 5 minutes.
7. Stir in almonds.
