ALMOND PEAR COFFEECAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wilson Estate in Dallas, Texas in 1982.
Ingredients:
1/2 cup unsifted flour
1/2 cup finely chopped almonds
1/4 cup packed brown sugar
1/4 teaspoon ground nutmeg
1/3 cup mayonnaise
1/4 teaspoon almond extract
17 ounce pound cake mix
1/3 cup milk
2 large eggs
2 pounds pears cored peeled and thinly sliced
Directions:
1. Grease rectangular baking pan.
2. In medium bowl stir together first 4 ingredients.
3. Stir in mayonnaise and extract until mixture resembles coarse crumbs then set aside.
4. In large bowl with mixer at low speed beat cake mix, milk and eggs just until blended.
5. Increase speed to medium then beat 2 minutes and spread in prepared pan.
6. Arrange pears in one layer on top of batter then sprinkle with mayonnaise mixture.
7. Bake at 350 for 50 minutes then cool slightly in pan and serve warm.
