Dairy free, this delcious pudding is made with almond milk, crushed almonds and sweetened with maple syrup and cinnamon. One can sweeten with agave syrup, splenda etc and omit cinnamon but our vegan/vegetarian relatives love this one I came up with. Read more . No one can guess there is no milk, cream or butter in this recipe!
Ingredients:
1/2 cup raw rice
4 cups organic almond milk- it's a non dairy almond beverage
4 to 6 tbs pure maple syrup or as desired
1/4 c fine crushed natural unsalted almonds
1 tsp cinnamon or to taste
dash salt
garnish: optional: non dairy whipped topping
Directions:
1. In heavy duty pot, place rice, almond milk, cinnamon, salt, maple syrup and bring to a boil.
2. Then reduce heat and cook and stir very frequently at a low bubble until rice has absorbed liquid and has become soft and tender.
3. Adjust sweetness if desired to taste
4. Remove from burner, cover and cool to room temp
5. Then chill well
6. Note: when cooling this pudding will not get any thicker than the finished product, there is no fat or dairy
7. May serve warm or chilled
