Almond Dainty Drop Cookies

This is one of my faves when it comes to cookies. It's light and yummy.
Ingredients:
2-1/2 cups flour
1 cup sugar
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup butter, softened
1/2 cup egg substitute
1/2 tbsp. almond extract
note: if you want you can place a slivered almond on the top but i prefer them plain.
Directions:
1. Preheat oven to 325° degrees F.
2. In a food processor mix flour, sugar, butter, salt and baking soda until it forms little balls. If you do not have a food processor, then use a pastry blender.
3. Add egg substitute and extract.
4. Drop batter by spoon full onto a greased cookie sheet.
5. Bake for 20 minutes or until lightly browned. I stress the lightly .
6. Makes 24 to 36 cookies
