ALMOND BUTTER BRICKLE COOKIES I host a large cookie exchange every Christmas and this is a recipe from the 2005 exchange. I always have everyone make an additional 3 dozen cookies for the exchange. One dozen from each participant goes to our wait staff at the restaurant we go to and two dozen goes to a local nursing home or hospice. Read more . This recipe was submitted by my friend Lisa.
Ingredients:
2 cups butter softened
2 cups granulated sugar
2 cups powdered sugar
2 cups vegetable oil
4 large eggs
2 teaspoons almond extract
9 cups all purpose flour
2 teaspoons baking soda
2 teaspoons cream of tartar
1-1/2 teaspoons salt
2 cups toasted almonds chopped
1 package butter brickle bits
Directions:
1. In mixing bowl cream butter and sugars then add oil, eggs and extract and mix well. Combine flour, soda, cream of tartar and salt and gradually add to creamed mixture.
2. Stir in almonds and butter brickle bits then shape into balls and roll in granulated sugar.
3. Flatten with fork and bake on ungreased cookie sheet at 350 for 14 minutes.
