I wanted to make the old fashioned Five Layer Bar cookie but wanted to come up with something new. These cookies are the perfect combination of almonds and chocolate and are WHEAT-FREE! If you love almonds and chocolate, you will love these cookies/bars.
Ingredients:
1 and 1/2 cups of semi-sweet chocolate chips (dark chocolate chips make the recipe richer in chocolate flavor)
2 cups sliced almonds
1 can of sweetened condensed milk
2 1/2 cups ground almonds
1/2 cup butter, melted (1 stick)
Directions:
1. Preheat oven to 350 degrees
2. Cover a 13x9 pan with Release Aluminum foil or a silicone pad.
3. Mix the melted butter with the ground almonds, stirring well.
4. Pat this mixture on to your pan, covering the bottom of the pan as evenly as possible.
5. (If you pan is slightly larger, add more butter and ground almonds)
6. Sprinkle the almond -butter crust with the chocolate chips evenly.
7. Pour the condensed milk directly over the chips, as evenly as possible.
8. Sprinkle with the sliced almonds.
9. Press the almonds lightly over the cond. milk with your finger tips.
10. Bake for 20 minutes or until lightly browned and set.
11. Cool for at least 30 minutes and slice into diamonds or squares.
