Almond Baked Brie In Puff Pastry

Note that this recipe is for restaurant/deli quanitites. If you have a large potluck, add a little class with these.
Ingredients:
1 6 pound wheel of brie
2 c chopped almonds
2 tbsp butter, melted
3 12 square sheets puff pastry
1 egg
water
Directions:
1. Preheat oven to 425.
2. In a large heavy skillett, toast almonds until golden brown over high heat.
3. Brush the top of the brie with the butter.
4. Sprinkle with toasted almonds and press to embed the almonds in the Brie.
5. Roll two puff pastry sheets until 1/8 thick, slightly larger in diameter than the cheese.
6. Place the Brie wheel on top of one sheet, and cover with the other.
7. Pinch sides together and trim off extra dough.
8. Beat 1 egg with 2 tsp water, and brush over top and sides of pastry, reserving some.
9. Cut leaves, flowers, etc from the third sheet of pastry. Decorate the top of the wheel. (Avoid more than 2 layers of decoration)
10. Brush remaining surfaces with the rest of the egg mix.
11. Bake for 30 minutes or until golden brown.
