Allo Bhujiadry Dry Potato Curry Indian Style

This is served as a side dish along with several veggie dishes and has a very different flavor ans consistency.
Ingredients:
4 large potaoes
3 tblsp.good olive oil
1/4 tsp cayyene
1 tsp salt
1/2 tsp. turmeric
1/4 tsp corriader powder
1/4 tsp garam masalah
2 chopped scallions
1/8 cup chopped mint leaves
2 tomatoes
1 tsp.onion seeds..(optional)
Directions:
1. Heat oil.
2. Add potates(sliced in rounds or cut in small cubes). and fry one mintute.
3. Now add cayenne, salt , cumin, corriender and turmeric and stir till everything is mixed with oil.
4. Add chopped tomatoes and about a cup of water.
5. Cook covered on high heat till all water is absorbed, potatoes are cooked through and oil surfaces.
6. Add onion seeds now and stir once without breaking the potaoes(use a metal frying spoon).
7. Sprinkle garam masalah,fresh mint ,corriender and scallions.
