This is a recipe I received from my Sister many years ago. I have made it countless times and it's always a hit. I've also given the recipe away to many. It isn't spicy in the traditional sense. Can be doubled or tripled and freezes really well. I also add 1 cup of walnuts, you can call me nutty.
Ingredients:
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon clove
1/2 cup butter
1 cup sugar
2 eggs
1 cup mashed banana
1/4 cup orange juice
1/2 cup chopped walnuts
1 teaspoon real vanilla extract
Directions:
1. Preheat oven to 350'F.
2. Grease and flour a 9/5/3 inch loaf pan with butter.
3. Sift flour with baking soda, salt and spices.
4. Cream butter and gradually add sugar, beating until the mix is light and fluffy.
5. Beat in eggs one at a time.
6. Add sifted dry ingredients alternately with mashed bananas and orange juice stirring only to blend.
7. Fold in nuts and vanilla.
8. Pour batter into the greased loaf pan and bake for 1 hour or till a toothpick comes out clean.
9. Let cool 30 minutes in the pan.
10. Slice and enjoy.
