Don’t bother yourself wondering why all people wouldn’t take a bite of those fresh pineapple rings on top; simply the filling is loaded of pineapple ,and the taste is so rich and creamy. I found this in Eagle and it is really great. Read more ..Enjoy.
Ingredients:
1 cup all-purpose flour
1/3 cup (35 grams) confectioners (powdered or icing) sugar
113 grams cold unsalted butter, cut into small pieces
4 eggs
1 (14 ounce- can ) sweetened condensed milk.
1/3 cup butter, melted
240 grams thinly chopped pineapple rings
1/2 cup pineapple juice.
Directions:

2. In the bowl of your food processor place the flour and sugar. Pulse to blend together. Add butter and pulse until dough just begins to come together. Pat the dough onto the bottom and one inch (2.5 cm) up the sides of a 20cm loose bottom pie pan. Cover with plastic wrap and place in refrigerator while you make the filling.
3. In large bowl, beat eggs. Add remaining ingredients except pie crust; mix well. Pour into prepared crust. Bake 40 minutes or until knife inserted near center comes out clean. Cool. Serve warm or chilled. Garnish as desired. Store leftovers covered in refrigerator.
