All-In-One Cauliflower Supper

Ingredients:

  1. Cut the cauliflower into large florets leaving most of the inner leaves on. Cook in a large pan of boiling water for 7-10 minutes, or until just tender. Drain well.
  2. Meanwhile, peel and discard the skin from the sausage and roughly chop Place in a frying pan and stir over a high heat until the fat begins to run and the sausage starts to turn crispy at the edges.
  3. Add the scallionsand stir over the heat for a further 1 minute. Remove from the heat and stir in the cauliflower to coat in the juices, then transfer into a shallow ovenproof dish.
  4. Preheat the broiler to high. Heat the cheese sauce according to the instructions on the pack, then stir in the mayonnaise and half the parmesan. Spoon the sauce over the cauliflower.
  5. Sprinkle the remaining parmesan over the top and brown under the hot broiler for 3-4 minutes before serving.
