The batter puffs up and browns around the fruit nicely. Tastes great
Ingredients:
1 cup sugar
2 cups blueberries,raspberries or sliced straberries or peaches
1/2 cup(1 stick)butter
1 cup flour
11/2 tsp baking powder
1/2tsp. salt
1 cup milk
Directions:
1. Preheat oven to 375. In a mixing bowl,toss the sugar together with the fruit. Put the butter in an 8x11 ovenproof serving dish and place in oven to melt. Sift the flour,pbaking powder,and salt together into a bowl. Stir in the milk to make a batter. Pull the hot dish of melted butter out of the oven and pour in the batter,which will bubble around the sides. Quickly spoon the fruit and it's juices evenly over the batter. Return to the oven and bake until the dough is brown and has risen up around the fruit,about 30-40 mins.
