Alison's Black Bean Soup

Easy soup; great for lunches!
Ingredients:
2 tablespoons olive oil
1 cup green onion
1 carrot
4 radishes
1 garlic clove
1/2 teaspoon cumin
1/2 teaspoon oregano
1 cup vegetable broth
2 cups water
1/2 cup tomato juice
1 1/4 cups black beans
Directions:
1. Heat 2 tbsp oil in Dutch oven over medium heat. Saute onion, carrot, radish, and garlic until tender-soft; about 8 minutes. Add cumin and oregano, let cook for 30 seconds longer. Add remaining ingredients. Increase heat to high and bring soup to a boil. Reduce heat, cover Dutch oven, and let soup simmer for 20 minutes. Remove 1 cup of soup and puree in a blender. Add back into soup.
