This is the cake I made for my daughter Alicia's first birthday. It is a yellow cake with little bits of pineapple throughout. I used a basic cream cheese frosting recipe to frost the cake.
Ingredients:
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 cup sugar
3 large eggs, room temperature
3/4 cup milk
2 teaspoons vanilla
1/2 cup crushed pineapple, drained
Directions:
1. Preheat oven to 350°F.
2. Grease and flour 2 9-inch cake pans and set aside.
3. In bowl, combine flour, baking powder, and salt with a wire whisk.
4. In a separate bowl cream the butter and sugar until light and fluffy.
5. Beat in eggs, one at a time.
6. Add vanilla and mix until completely combined.
7. Slowly add flour alternately with milk.
8. At the end the batter should be smooth.
9. Stir in the crushed pineapple until well incorporated.
10. Divide between the 2 pans.
11. Bake for 20 to 25 minutes.
12. Cool 5 minutes in pan, then invert onto a rack and cool completely before frosting.
13. For a 9 x 13 pan - Baked at 350 degrees F. for 30 to 38 minutes.
