My husband came up with this recipe when we had a LOT of leftover fried chicken breast tenders from a Christmas party platter. We diced 'em up, sauced 'em up, and served over rice. Yay for leftovers!
Ingredients:
1/2 medium onion, diced
1 tablespoon vegetable oil
2 -3 garlic cloves, minced
3/4 cup white wine, any kind
3/4 cup soy sauce
3/4 cup tomato ketchup
1/4 cup sweet chili sauce
1/4 cup rice wine vinegar
1/4 cup white vinegar
1 tablespoon hot chili oil
1 tablespoon sesame oil
1/4 teaspoon red pepper flakes
1 tablespoon frank's red hot sauce
1/4 teaspoon ground black pepper
1/2 teaspoon ground ginger
1/4 cup brown sugar or 1/4 cup white sugar
4 -5 pre-cooked fried chicken breasts, diced into 1-inch cubes
hot cooked white rice
Directions:
1. In a skillet, brown onions in 1Tb. vegetable oil. Remove onions from pan, set aside. Add all other ingredients, bring to a boil. Boil until thickened, add cubed chicken and browned onions back to sauce in skillet, simmer for 5-10 minutes. Serve over hot cooked white rice.
