Alabama Snowballs

Snowballs are rare, here, so I decided to make my own! Very similar to the traditional Buckeyes, but with white chocolate rather than milk. Cook time includes chill time and prep time includes dipping.
Ingredients:
1 regular jar quality peanut butter(about 4 cups)
2t honey
4 cups crispy rice cereal
4 cups confectioners sugar
2lbs white confectioners coating(almond bark or candy coating)
sprinkles or coarse sugar
Directions:
1. Combine first 4 ingredients in large bowl.
2. Refrigerate about 30 minutes
3. Form into about walnut sized balls
4. Refrigerate for at least 4 hours, overnight is fine
5. Melt coating per package directions
6. Dip each ball into coating, covering completely. Remove from coating bowl with a toothpick(these can be left and removed after coating dries, then patch the holes with touch of the melted coating)
7. Immediately sprinkle each coated ball with desired decorations, as this dried very quickly.
8. Let set until firm
9. Store in a cool place
