Peanuts are common in African cuisine.
Ingredients:
4 lbs chicken pieces
1/4 cup vegetable oil
1 teaspoon salt
1 teaspoon curry powder
1 large onion (peeled and sliced)
1 large sweet red pepper (cut into strips)
1 large tomato (chopped)
1 1/2 cups uncooked rice
1/4 cup crunchy peanut butter
1/4 cup warm water
Directions:
1. Brown chicken in vegetable oil in large frying pan; set aside.
2. Remove all but 2 tablespoons of oil and drippings in pan.
3. Stir in curry powder and salt, onion, red pepper, tomato and rice.
4. Cover and simmer 5 minutes; return chicken to pan.
5. Cover; simmer until chicken is tender.
6. Remove chicken to large platter.
7. Blend peanut butter and water; stir into vegetables.
8. Heat to boiling.
9. Spoon over chicken.
