This recipe came my from my Aunt Barbara’s collection that I inherited when I inherited the family collection in 1980. Her notation says this was Uncle Bob’s most requested bean recipe.
Ingredients:
1-1/2-cups small dry red beans or dry kidney beans
1 cup uncooked rice
1-teaspoon salt
2 tablespoons dry wine
1 tablespoon toasted black sesame
Directions:
1. Rinse beans then cover with cold water and let soak 4 hours or overnight.
2. Drain then cover with fresh water plus salt.
3. Boil then reduce heat and simmer until tender about 1-1/2-hours.
4. Drain but retain liquid.
5. Prepare rice by using bean liquid plus enough water to make 1-1/2-cups liquid.
6. Cover and bring to boil.
7. Add beans and bring to boil again then reduce heat and simmer 15 minutes.
8. Add wine.
9. Mix gently and remove from heat and let sit until sake is absorbed. Cool.
