I'm on an adzuki/aduki (red bean) kick since I just cooked up a whole bunch of them and am finding lots of uses for these wonderful beans, both savory and sweet. I decided to put a twist on ordinary veggie burgers with a Japanese flair, and added dulse flakes for extra flavor and the loads of nutrients sea vegetables have to offer! Powdered ginger, or a small piece of fresh ginger, would've been optimal here but I only had coriander. I added salt but dulse is naturally salty so you might want to omit it.
Ingredients:
1 cup cooked adzuki beans (about 1/2 cup dry)
1 yellow onion
1/2 cup breadcrumbs
1/3 cup carrot, shreds
1/4 cup dulse flakes (flakes are better than leaves)
1 tablespoon coriander powder (or ginger powder)
1 tablespoon tamari soy sauce
1/2 teaspoon kosher salt
2 egg whites (or 1 whole egg)
Directions:
1. Peel the onion and chop it up in a food processor.
2. Put the rest of the ingredients in the food processor, and pulse until it forms a completed mixture, scraping down the sides with a fork or rubber scraper.
3. Put the mixture into a bowl, cover, and refridgerate for 30-60 minutes.
4. After it's done refridgerating, mold into 4-6 patties.
5. Heat a little olive or grapeseed oil in a saucepan, and cook each patty for 8-10 minutes on each side.
6. Serve with a nice dipping sauce and your favorite leafy greens for a complete meal!
