Adobo Sa Gatang Bayawak

This dish puts a spicy flavor and taste like chicken, but more delicious than chicken, because of garlic and coconut milk
Ingredients:
1 kg bayawak (monitor lizzard from the philippines) cubed into bite size pieces
3 cloves garlic, crushed
3 tbsp white vinegar
5 tbsp soy sauce
1 tsp salt
1 dahon ng laurel (bay leaf)
1 tsp ground black pepper
1 cup water
3 tbsp oil
5 cups of pure coconut oil
6 cups of second coconut oil or pangalawang gata
Directions:
1. 1. Mix bayawak, garlic, vinegar, soy sauce, salt, laurel and pepper and let it sit for 15 to 30 minutes.
2. 2. Add half cup water and bring to boil
3. 3. Cover and simmer with occasional stirring until water dries up
4. 4. Add oil and stir fry for 5 minutes
5. 5. Add the pure coconut oil and let it seamier, til the coconut milk dry.
6. 6. Serve and enjoy with any liquor or beer you desire.
