Ingredients:
1 tablespoon(s) olive oil
2 ounce(s) andouille pork sausage (or chicken sausage)
1/2 cup(s) onion chopped
1/2 cup(s) celery chopped
1/2 teaspoon(s) kosher salt
1 cup(s) brown rice
1 teaspoon(s) italian seasoning (or 1t saffron)
2 cup(s) low-sodium chicken broth
1 pound(s) boneless, skinless chicken breast cut into large chunks
1 cup(s) frozen peas thawed
1 red bell pepper thinly sliced
fresh parsley and scallions to taste chopped
Directions:
1. Heat oil in a large saute pan or skillet over medium heat. Add sausage adn cook for 3 min, seperating sausage with wooden spoon. Add onion, celery and salt. Saute 3 min. Stir in brown rice. Stir Italian Seasoning into chicken broth and add to pan. Bring to a boil and add chicken.
2. Cover and let simmer for 30-35 min, until all liquid has been absorbed and the rice is tender. Stir in peas and sliced bell pepper. Serve in bowls, topped with parsley and scallions.
