Fresh apple, broccoli, cranberry, walnut salad Makes 8 servings
Ingredients:
1/4 cup olive oil
3 tbsp lemon juice
1 tsp sugar
1/4 tsp salt
1/2 cup dried cranberries
3 large red apples
4 cups broccoli florets
1/2 cup walnuts, chopped
Directions:
1. Cut apples in 1/2 inch cubes
2. Whisk oil with 2 tabsp lemon juice, sugar and salt
3. Add cranberries and let soak for 10 minutes
4. In large bowl toss apples with remaining lemon juice
5. Add broccoli, walnuts and cranberry mixture.
6. toss to coat
7. Cover and refrigerate for 2 hours
8. toss before servings
