Instead of the traditional ABC soup, I turn it into a porridge meal instead.
Ingredients:
1/2 cup of unpolished rice
1 teaspoon of olive oil
4 cups of water
1 tomato (cut to 8pcs)
1 carrot (cut to cube)
1potato (cut to cube)
50g of cut chicken fillet (marinated with salt and pepper)
1/2 pc of sezhuan veg (bout 30g) - washed, soaked and sliced to long strip
1 egg
1/2 cup of french beans (chopped to 1cm length)
pepper to taste
Directions:
1. Washed the rice clean. Mix with the olive oil and 1/4 cup of water and leave for 10mins.
2. Add in balance of the water and boil.
3. Add in carrot, tomato, potato and chicken fillet.
4. Boil for 20mins with low fire.
5. Add in sezhuan vege and boil for another 5mins.
6. Beat the egg and mix with french beans, pour into the porridge.
7. Boil for 2 mins, served with crispy fried shallot and garlic.
