Ingredients:
1 1/4 cup flour
1 tablespoon baking powder
1/4 tsp. salt
2 cups raisin bran cereal
1 cup fat free milk (skim)
1 egg, slightly beaten
1/2 cup applesauce
1/3 cup pioneer golden light brown sugar, firmly packed
2 tablespoon margarine, melted
Directions:
1. Heat oven to 400 degrees.
2. In a large bowl mix flour, baking powder and salt.
3. In a medium bowl mix cereal and milk;
4. let stand 3 minutes.
5. Stir in egg, applesauce, PIONEER GOLDEN LIGHT BROWN SUGAR and margarine.
6. Add flour mixture; stir just until moistened. (Batter will be lumpy). Spoon batter into muffin pan sprayed with no stick cooking spray or lined with cupcake sleeves, filling each cup 2/3 full.
7. Bake for 20 minutes or until golden brown.
