Ingredients:
3 large carrots, shredded
1 cup raisins
1 cup walnuts (optional)
1/4 cup finely chopped celery
2 tablespoons shredded coconut
1/2 cup mayonnaise
2 tablespoons sour cream
1 tablespoon cider vinegar
1/2 teaspoon white sugar
1/4 teaspoon salt
Directions:
1. In a medium bowl, combine shredded carrots, raisins, walnuts,if using, celery, and coconut. Whisk together mayonnaise, sour cream, vinegar, sugar, and salt. Stir dressing into carrot mixture. Chill a few hours before serving.
