A Bit of Everything Banana Bread

delicious banana bread! very forgiving (i've swapped the type of flour i use, used extra apple sauce for most of the oil, once left out the applesauce all toether and threw in an extra bit of banana) and so far have not been disappointed with the result! this bread is RIDICULOUSLY moist, so it might need to be kept in the refrigerator.
Ingredients:
1 3/4 cups sugar
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon ground nutmeg
1 pinch ground cloves
1 teaspoon instant coffee (rub between fingers to break down)
1 3/4 cups flour (i use whole wheat, which results in an even denser bread)
1/4 cup rolled oats
1/4 cup cornmeal
1/2 cup canola oil
1/4 cup unsweetened applesauce
3 large eggs, room temperature
1 teaspoon vanilla
1 1/2 teaspoons baking soda
1/4 cup low-fat yogurt or 1/4 cup low-fat buttermilk
1/2 cup semi-sweet chocolate chips
5 very ripe bananas
Directions:
1. Preheat oven to 350°F Spray 2 loaf pans or 1 bunt pan.
2. In a large bowl, mash bananas with a masher or well-washed hands.
3. Add all the ingredients except flour and chocolate chips.
4. Add the flour and mixed just until combined.
5. Pour half of the batter into the pan(s). Sprinkle chocolate chips evenly across the top and then add the remaining batter to the pan(s).
6. Bake for 50-70 minutes, until a toothpick comes out almost clean but still collecting a few crumbs. Let cool 15 minutes after removing from oven and then remove from pan(s).
