Bob's Red Mill Recipe with a few low cal swaps
Ingredients:
2 cups oats
2 cups wheat flour
1/4 cup splenda brown sugar blend (or 1/2 cup regular brown sugar)
1/3 cup wheat germ
1 1/4 serving (1/3 cup) bob's red mill 7 grain cereal
2 tablespoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
2 eggs
1 1/2 cups skim milk
1/2 cup applesauce
1/3 cup honey
2 apples, chopped (or 2 cups peaches)
Directions:
1. Preheat oven to 400*F
2. In large mixing bowl, stir together the oats, flour, sugar, wheat germ, 7-grain cereal, baking powder, cinnamon, and 1/2 teaspoon salt
3. In medium bowl combine eggs, milk, applesauce, honey, and fruit
4. Add egg mix to dry mix all at once then stir together quickly just until dry ingredients are moistened
5. Fill greased muffin tins 2/3 full
6. Bake at 400*F for 15 minutes or until done
7. Cool on wire rack
