7 Grain Bread

great, hearty, and healthy bread. no sugar or fat. adapted from better homes and gardens dieters cookbook.
Ingredients:
2 3/4 cups stone ground whole wheat flour
3/4 cup seven-grain cereal
1/4 cup soy flour
1 (1/4 ounce) package active dry yeast
2/3 cup warm water
1/3 cup unsweetened applesauce
1 tablespoon honey
1/4 cup egg substitute
1 teaspoon soymilk
Directions:
1. combine yeast in warm water.
2. in large mixing bowl combine all remaining ingredients except for the soy milk.
3. add yeast and water and mix well.
4. knead for 6-8 minutes.
5. cover and let rise in a warm place for about 1 1/2 hours or until doubled.
6. spray loaf pan with cooking spray and shape dough into a loaf and put in pan.
7. cover and let rise again for about 45 minute preheat oven to 350.
8. just prior to baking brush the top of dough with soy milk and sprinkle some 7 grain cereal on top.
9. bake for 40 minutes.
