6 Can Spicy Soup - Day Ahead Recipe

This is another variation of an easy multi-can soup that is designed to be made the a day ahead of serving. Very hearty and only gets better the more times the pot is reheated. Spicy for a little bit of a kick!
Ingredients:
1 lb ground beef
1/2 large onion, chopped
2 cups water
3 (19 ounce) cans minestrone soup
1 (10 ounce) can original rotel
1 (14 ounce) can pinto beans, drained
1 (14 ounce) can white corn, drained
Directions:
1. Brown ground beef with onion in large soup pot, drain any fat from cooked beef and place back in pot.
2. Add water, minestrone soup, Rotel, pinto beans, and corn to pot. Bring to a boil. Reduce heat to low, cover, and simmer for 1 hour stirring occasionally.
3. Turn off burner and let sit for 1 hour to cool, place pot directly into refridgerator and cool for at least 2 hours to let flavors come together (preferably overnight.) Reheat, serve, and enjoy!
