Whether you call them pommes frites at your favorite bistro, French fries at the fast food joint, or steak fries at an expensive steakhouse...these are the best. And, they are just as easy to make at home.
Ingredients:
2 1/2 lbs russet potatoes (the longer the better)
2 -3 quarts canola oil
kosher salt, to taste
Directions:
1. Slice washed, unpeeled potatoes lengthwise into 1/4-inch-thick planks, then into 1/4-inch sticks. Soak fries in very hot tap water for 1 hour. Pat dry and set aside.
2. Pour oil into a large, heavy pot, filling no more than halfway. Heat over medium-heat just until oil reaches 325 degrees (you can use a candy thermometer.) Carefully drop the fries into oil and turn burner to high. Cook for about 8 minutes, until barely golden. Transfer fries to a paper-lined baking sheet and let rest for 10 minutes, or up to 2 hours.
3. Reheat oil over medium-heat to 350 degrees. Return half the fries to oil and cook until crisp, 1 to 2 minutes. Transfer to paper-lined bowl and sprinkle generously with salt. Repeat with remaining fries. Serve immediately.
