5-Part Potato/Ambrosia Pie “#5FIX”

5-Ingredient Fix Contest Entry. Ambrosia is pretty hard to come by, but this pie can put you on the right path! Just 5 simple ingredients, but the flavor feels fresh and homemade. A pot pie with a potato topping, pretty hard not to feel good after this! The first piece you cut out is always the hardest and you are allowed to call it practice. Just serve it all up and let the taste carry the day!
Ingredients:
18 ounces of chicken corn chowder (i used progresso)
15 ounces of freshlike mixed vegetables
1 premade pie crust (you can find in your frozen section)
1 (24 ounce) package simply potatoes traditional mashed potatoes
8 ounces of shredded sharp cheddar cheese
Directions:
1. Preheat oven to 400.
2. Pie crusts come in packages of two, so put them both out on your counter.
3. In a small bowl, mix the corn chowder and mixed vegetables.
4. Once mixed up, put half into each pie plate, it should fill about half of the pie crust.
5. Top each pie with dollops of potatoes to cover.
6. Place in oven for 30 minutes.
7. Put shredded cheddar on top and cook another 10 minutes.
8. Let stand for 15 minutes to allow for neat plating- the cheese will try to hold things together but we all know cheese has its limitations.
9. Season to taste.
