5 minutes and it's done! I LOVE fish, but my husband would rather starve, so when I make some wonderful fish dish for myself, I whip this up for him. It's so fast and easy that it doesn't add to my meal prep time at all! Great for scallops too!
Ingredients:
1/2 lb shrimp, peeled & deveined
1 -2 tablespoon olive oil
2 whole garlic cloves, peeled
1/4-1/2 teaspoon crushed red pepper flakes
1 teaspoon montreal seasoning
1 teaspoon fresh lemon zest
1 1/2 tablespoons lemon juice
2 teaspoons fresh parsley, finely chopped
Directions:
1. Heat oil in large non-stick skillet.
2. Smash garlic cloves to release scent but do not chop. Add garlic, red pepper, and shrimp to oil.
3. Cook, stirring to mix, until shrimp begins to turn pink (about 2-3 minutes).
4. Add zest, lemon juice, and parsley. Toss to mix. Remove garlic from pan and discard.
5. Remove from heat and serve!
